Q. Many recipes only use egg yolks, and thus there is never any mention of what one should do with the egg whites. My question is, can/should egg whites be stored and if so for how long a period of time?

A.   According to the Food Safety and Inspection Service (FSIS), a branch of the United States Department of Agriculture, uncooked egg whites may be stored, covered, in the refrigerator for 4 days and frozen (0 degrees F.) for up to 12 months.....continued
